✨🍾Summer Solstice Cake🍾✨

Last Friday night we celebrated “San Juan” in Spain, I don’t like fireworks, so I stayed at home with Bryce. I really enjoyed these cakes, I decorated one with pastry cream and the other with candied fruits💕 It is the recipe that has always been made in my family and it tastes…🤤 I think these two will not last long, next weekend I will make one again! With a good coffee, it is also a perfect breakfast for the whole summer🍃

Ingredients

🥂For one cake:
– 600g. strong flour
– 220g. milk
– 150g. butter
– 150g. sugar
– 25g. fresh yeast
– 3 eggs
– Grated rind of 1 lemon
– 2 tablespoons of aniseed (the liqueur)
– A pinch of salt
*The yolk of an egg to paint the cake
*Candied fruits and pine nuts to decorate the cake.

🥂Pastry cream:
– 500g. milk
– 100g. sugar
– 50g. cornstarch
– 3 eggs
– 1 tablespoon vanilla sugar

Steps:

1. Mix the warm milk with the yeast.
2. Add the flour and the other ingredients little by little, while mixing.
3. Cover the dough with a cloth and let it rest for 1 hour.
4. Pour olive oil on baking paper and place the pastry on top.
5. You will see that the dough is very sticky, this is normal. Brush your hands with olive oil to be able to manipulate and shape it (as I show you in my Instagram video).
6. Paint the cake with an egg yolk to make it shine.
7. Decorate as you like. I made two cakes: one with pastry cream and the other with candied fruit (I put some pine nuts in both).
8. Bake for about 30 minutes at 200ºC (baking time depends on each oven).
