These rolls are like a bite of Mediterranean summer, and they are scrumptious! All of these I made were over on the same day✨
✨Ingredients
🍅Tomato pesto:
– One cup of sun-dried tomatoes (you can find them at the grocery store).
– Half a cup of olive oil.
– 200g. parmesan reggiano cheese
– 2 cloves of garlic
🍅Dough for the rolls:
– 500g. flour
– 225g. milk
– 75g. olive oil
– 25g. fresh yeast
– 1 egg (and an extra yolk for painting the rolls).
– A teaspoon of salt
*The dough is lightly salted because the filling contains sun-dried tomato and Parmesan, two ingredients with a lot of salt.
*You will also need crushed walnuts to decorate the rolls when they are half baked.
✨Steps:
– Mix all the ingredients for the roll dough and let stand for 1 hour.
– Crush the pesto ingredients in a mortar and pestle until you get a texture you like.
– Create the rolls as you can see in my Instagram video.
– Paint the rolls with egg yolk and bake for 15 minutes at 190ºC.
– Halfway through baking, put crushed walnuts on top of the rolls.
– Bake for 15 more minutes at the same temperature.
